Making Refreshing Salad Dressing

Watching what foods we consume, I’m always looking for homemade recipes for our family to try.

I LOVE eatting salads!!  Matter of fact, most of my children love to eat salad.  I know that’s not the norm but what is normal?

When my children are little, I alway start them eatting salads.  I try to make the salads fun and tasty.  Like adding apples, raisins, or even cranberries to the salad base.

Now that my children are older, they still have that love for salads.  We could have a dinner of just salad and not a complaint would be heard.  I love that!!

Here is the current favorites at our home.

Creamy Ranch Dressing

1/3 cup plain Greek-style non-fat yogurt

1/3 cup low-fat buttermilk

3 Tablespoons mayonnaise

1 1/2 teaspoons fresh lemon juice

1 teaspoon Dijon mustard

1/2 teaspoon onion powder

1/4 teaspoon garlic powder

1 Tablespoon finely chopped fresh chives

1/4 teaspoon salt

Directions:  In a medium bowl, whisk together all of the ingredients until well combined.

Yield: 8 servings

 

Avocado Lemon Dressing

1/2 ripe avocado

1/4 cup low-fat buttermilk

3 Tablespoons fresh lemon juice

3 Tablespoons chopped fresh parsley

3 Tablespoons chopped chives

1/4 teaspoon salt

1/8 teaspoon black pepper

Directions:  Put all of the ingredients into a blender and blend until smooth.

Yield: 8 servings

 

Salad dressing is so easy to make at home.  Try it!  You will be happy to know that your family is getting the best ingredients (plus you will know what’s in the dressing because you made it yourself.)

    I love the Avocado Lemon recipe! Do you think it would be OK if I used yogurt instead of buttermilk, or Almond Milk? I substituted almond milk for buttermilk for our scones. This sounds so delicious I can’t wait to make it.

    I’m looking to start making more of our dressings – it has to be healthier and cheaper.
    When my son was young (way long ago) and he would come home from school and ask for a snack, I never worried – his idea of a snack was a salad with oil and vinegar! I was the envy of all the mother’s in his class
